Sweet Potato Bread


  • 2 medium sweet potatoes
  • 1/2 cup milk
  • 1 cup brown sugar
  • 2 eggs
  • 1/4 cup oil of choice
  • 1 teaspoon vanilla
  • pinch of nutmeg, pinch of cinnamon
  • 2 teaspoons soda
  • 1 1/2 cups flour


  • 2 tablespoons butter
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream, warm
  • dash of bourbon
  • 1/4 cup walnuts

Preparation/Cooking Process:

Preheat the oven to 400F. Using a sharp knife, pierce the sweet potatoes several times, then place in the oven directly on the rack. Bake for about an hour or until they are cooked. Remove and allow to sit until they are cool enough to handle.

Butter a loaf pan. Scoop the sweet potatoes into a bowl and discard the skins. Add the milk and roughly mash the potatoes. Add the sugar, eggs, oil, vanilla and spices, beating to combine. Gradually add the rest of the dry ingredients. and mix until everything is incorporated. Pour the batter into the pan and bake for about an hour at 325F. Allow to cook for an hour.

In a small saucepan over medium heat melt the butter, add the sugar and the heavy creme and then add the bourbon. Simmer for about 5 minutes and let it cool a bit until the mixture starts to thicken. Spread the caramel over the cool bread and sprinkle some walnuts on top.
