Pomfruit Slices

Ingredients:
- 2 medium apples, peeled and cut into rings or wedges
Batter
- 3/4 cup flour
- 2 tablespoons cornstarch
- 1 tablespoon baking soda
- 1 tablespoon sugar
- 1/2 cup fizzy cider
Caramel Coating
- 2/3 cup honey
- 2/3 cup heavy creme
- 1 tablespoon salted butter
- pinch of cinnamon
Preparation/Cooking Process:
Heat about an inch of oil in a small frying pan over medium heat. In a separate bowl whisk together the ingredients for the batter. Gently dip each peace of apple in to the batter, letting the excess drip off before lowering in to the hot oil. Fry for a about a minute on each side or until golden brown and puffy. Remove to a plate lined with paper towels to drain.


For the topping combine the ingredients over medium-high heat in sauce pan. Let it cool a bit and continue whisking until the mixture starts to thicken a little bit.
