Soft Banana Bread
I can’t express how delicious this desert turned out when we cooked it on our stream channel. If you are curious about the recipe, read below.
- 1/4 cup of unsalted butter, melted
- 1/3 cup granulated sugar
- 2 eggs
- 2 mashed bananas
- 2 cups of flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- Pinch of salt
- 2 teaspoons candied ginger
- 4 oz. cream cheese softened
- 1/4 cup of confectioners’ sugar
- 1 tablespoon milk
- chopped walnuts for garnish
- 1/4 cup unsalted butter softened
We started off this time with preparing the Banana bread (first timers for this one), the oven was turned around 200°C so it would be prepared for when the mix arrives and following up came the products.
We grabbed a medium sized bowl and mashed the bananas in well then added the vanilla extract, eggs and started mixing them together, we kept adding the baking soda, baking powder, flour, butter, sugar, and ginger and kept mixing with a kitchen Facebook Live until we got a smooth batter ready for baking.
The oven was already hot and waiting so we had to put the mixture in a loaf pan but first we greased it with butter and dust it inside with a bit of flour so it wouldn’t stick, we left it the oven for about 50-60 minutes to rise.
For the frosting, we used the cream cheese, unsalted butter, confectioner’s sugar, and tablespoon or two of milk mixed them all together in a bowl and left them in the fridge to cool off for a bit.
After our bread was ready, we had to leave it to cool off as well and after about 15 minutes and started spreading frosting over the top as much as we could, sprinkled it with crushed walnuts and voila Soft Banna Bread ready for a dessert or snack, would go great with Bulgarian or Greek yogurt!

We really liked the taste it was similar to some types of cake we do but with the frosting on top it was magnificent, a combination between, sweet, sour and banana
