Gracuu’s homemade meat pie
- 2 batches flaky pie dough (1 for bottom and 1 for top cover)
- Butter – lots of it
- fresh onion
- 3 cloves garlic (minced)
- 1 pound stew beef cut into bite-sized pieces(we replaced it with pork meat)
- 1/2 pound sausage cut into bite-sized pieces
- 1 pound ground beef or pork
- 3 tablespoons of flour
- 1/2 teaspoon each minced thyme and rosemary
- 1/ teaspoon each salt and pepper
- 2 cups beef stock
- 1 cup peas
- 1 beaten egg for glaze on top
We start by preparing two batches of the dough. For each use one stick of butter, 2 cups of flour and 1/4 cup of water. Rub the flour into the butter until you get small chunks of the butter then add the water and mix it till you get a workable dough. Leave it in the fridge for 30 minutes until you are preparing the filling.
The main idea is to have 3 different types of meat. Start by preheating some butter on medium heat in a pan. Have a separate big enough bowl because we are going to cook the meat one by one.
Add the vegetables first then put them into the separate bowl. Then add the pork beat, after it is cooked transfer it to the bowl again and leave any fat or juice in the pan. Add the sausage and do the same, then lastly add the minded meat.
While cooking the minced meat, pour 3 spoons of flour on it and stir. Then add the 2 cups of broth and stir till it thickens a bit. Add all the rest of the filling from that separate bowl and cook for another 30 minutes. When ready, leave it to cool as much as you can.
Use some pie form or in this case, I used a bigger form because I had a lot of filling. So I laid down half of the dough then poured the whole mixture. After that, I put the other half of the dough on top to close it. You can play a bit with decorations.
Preheat the oven to 200 degrees celsius and bake for 30-40 minutes or until the surface becomes golden. Leave it to cool completely before cutting.
