Skewered Peanut Chicken
- 4 Large chicken breasts
- Soy sauce
- Freshly grated ginger
- Pinch of salt
- Cherry tomatoes for garnish (optional)
- Creamy peanut butter
- Can of coconut milk
- Brown sugar
- Soy sauce
- Red curry paste
Another day, another cooking stream on Mixer and we made some very tasty chicken breasts with a rather unusual sauce (for us at least).
Here’s how we did it:
We started off by marinading the chicken in a bowl and leaving it for about 4 hours. We got the bowl with the chicken out and left it for a few more minutes, meanwhile, we started preparing the sauce.
We got a saucepan, heated it up and put the peanut butter inside first then followed the coconut milk, brown sugar, soy sauce, and curry paste and started stirring them carefully.
While the sauce was cooking we heated the oven at around 170°C and put the chicken without the marinade into a pan that fit enough.
Finally, we decided to make a small dish of rice just for the chicken to breasts, when the breasts were ready for about 15-20 minutes, we pulled them out of the oven and spread them with the sauce all over, mmm delicious peanut
Duck meat here is hard to find in any form so we replaced it with chicken of course.
Imagine a soup that has everything so spicy and hot (soy sauce, red chilly flakes, anise, and ginger. If you have flu or whatever this potion is going to heal everything!
The rest of the cooking is just standard stuff. The chicken (duck) breasts had to be cut into small pieces and put on top of the bowls filled with the magic potion.

It’s needless to say that this fairly easy to prepare dish was absolutely incredible we both liked it a lot and are giving it a full 10.
