Wild Rice Cakes
This patties recipe, prepared on our live stream cooking channel, balances both sweet and sour tastes and will make you want to eat more of them.
- 1 tablespoon butter
- 1 clove garlic minced
- small leeks – half moon cut
- 1/2 cup of heavy cream
- 2 cups of cooked wild rice
- 1 egg
- 1/2 cup sweet corn
- 1/4 cup of shelled edamame
- 1/4 cup of mozzarella cheese
- 1 teaspoon salt,
- 1/2 teaspoon of black pepper
- 1&1/2 cups flour
So for this recipe, we didn’t exactly use wild rice, because we were unable to find it so we went some normal long grain white rice.
First, prepare the rice in the usual fashion, 1 cup of rice and about 2-3 cups of water, let it boil till ready and take it off the stove to cool off, so it would be ready for the next step
Next up we melt the butter in pan in medium to low heat, put the leeks and garlic, stir them until soft for 2-3 minutes follow up with some heavy cream and stir for a minute until the leeks have absorbed it. Remove and transfer to a mixing bowl, allow it to cool then, add all the other ingredients inside except the flour that is left for last then gradually add the flour to get a denser dough not sticky.
For the last step, prepare a frying pan with some oil, heat again for medium-low and add some oil to your hands so you can form the cake mixtures into patties roughly about 4-5 inches across and half an inch.
Make them a few and drop them in the pan for about 3 minutes flipping them halfway until they get to a golden crust, personal preference is also acceptable.
There you have them deliciously spicy garlic flavored rice cakes, yum!
